Overview

Experience a 5 day journey around Sertão and learn about the unique culture and heritage through the cuisine.

Food Safari Sertão takes place in the Paraiba State, within the northeast region of Brazil.

Its capital called Joao Pessoa is located by the coast, but this Food Safari expedition takes travellers into the countryside, the region known as Sertão.

This is a 5 day journey with accommodation in two different farming  hotels. The farms’ economy is related to goats and sheep, as well as sugar cane for Cachaça distilleries.

Besides the beautiful landscapes of the Sertão, the main attraction is the local culture & history, which reflects the gastronomic heritage.

This is a poor region in terms of economy but admirably rich on folklore and religious manifestations.

People from Sertão have adapted their life to the very dry climate and developed cooking techniques to have the best use of the ingredients.

João Pessoa / Cabaceiras

Arrival in João Pessoa (JPA), capital of Paraíba state. The host/chef will be waiting to depart towards the city of Cabaceiras – 3h drive on asphalt road.
Check-in at the hotel and learn how to prepare the Bode no Buraco.
Cocktail in the hotel yard.
Dinner and overnight.

Cabaceiras

Depart after breakfast to Carnaúba Farm, in the city of Taperoá to visit the goat cheese production, well-known for the prizes received and for belonging to world famous
Brazilian writer Ariano Suassuana’s family.
Lunch in the farm prepared using local cheese.
After lunch, depart to Lajedo de Pai Mateus.
Hiking on trails of Caating Bioma to learn about the fruits and native plants that are used by the sertanejos in the local cuisine.
Sunset at the Lajeado, return to the hotel.
Dinner and overnight.

Cabaceiras/Campina Grande /Areia

Check-out and depart to Campina Grande city.
Full day of activities in the Casa de Cumpade with workshop to learn how to prepare regional dishes: artisal Manteiga de Garrafa (bottled butter) and Carne de Sol (beef jerk), Buchada de Bode (Goat’s guts stew),
techniques of stew preparation, Galinha de Casamento (Wedding Chicken), Farofa d’água (corn flour) and Pirão de Galinha (spiced chicken thickened with manioc flour stew). Drive to Areia city and check-in at the hotel.
Dinner & overnight.

Areia

Departure after breakfast to visit the Areia ́s city centre, a Historical and Cultural Heritage area in Brazil. Stop for lunch and visit the Engenho da Cachaça Triunfo (Sugarcane spirit distillery) and Casa do Doce (Dessert House).
Return to the hotel, dinner and overnight.
